A Bite of Paris Videos

In February 2018 I launched a series of videos on YouTube, A Bite of Paris. Every few weeks or every month, I would go to a food or gourmet shop, restaurant, or cafe and speak about their specialty and also do a tasting. Over the course of almost three years, I made 18 videos, which my brilliant partner Vincent filmed and edited. Along the way I tasted chocolates, foie gras, hot chocolate, baguettes, and salted butter caramels plus many other wonderful delicacies. There were a few videos where I would meet friends at their favorite café or restaurant. 

 Today I am reposting the links to a number of the videos, plus descriptions, and I will also list the link to the page with the entire collection of 18 videos, if you  want to binge on them Netflix style.

I am happy to have the prolific author John Baxter as my guest on A Bite of Paris. John has written many books about Paris including The Most Beautiful Walk in World, We’ll Always Have Paris, and books about the neighborhoods of Paris. Montmartre, Saint Germain des Pres, and Montmartre. John has also written two books about food in France, The Perfect Meal and Eating Eternity. 

John and I had coffee outdoors at the pastry shop and café, Gerard Mulot, in Saint Germain des Pres.

A Bite of Paris: Dark, Chocolate, Chestnut Cake

Since almost all of us are on lockdown, I decided to make and bake a dark, chocolate, chestnut cake for you today. Please know this is my first food demonstration I’ve ever done, so please let me know how I’m doing. 

The recipe, which I listed below, is super easy and has only four ingredients. It also is gluten-free, with no flour in it.

Chocolate Chestnut Cake

Ingredients

• Serves 6-8
• 3 ½ ounces (100 g) dark chocolate (at least 60% cacao)
• 6 ounces (500 g) sweet chestnut cream (or 2 x 9 ounces cans)
• 4 eggs
• 9 tablespoons (125g) butter
• Pinch of salt
• 8 inch (22 cm) round cake pan

Instructions

1. Heat oven to 350 °F (180 ° C). Butter the cake pan and line with parchment paper. Separate the eggs.
2. Put the chocolate and butter in a heatproof bowl, place over a pan of just simmering water and heat until melted. Remove from the heat, stir to combine and let cool.
3. When the mixture is at room temperature, stir in the chestnut cream, then the egg yolks.
4. Add a pinch of salt or cream of tartar to your egg whites and whip to stiff peaks. Fold 1/3 of the whites into the chocolate mixture, to lighten up the batter, and then fold in the rest. Pour the mixture into the prepared mold and bake 30 minutes or until set.
5. Let cool before removing from the pan.

A Bite of Paris Episode 16: Lisa Anselmo at Les Pipos Café

I am pleased as punch to have my friend Lisa Anselmo as my guest on A Bite of Paris. Lisa is the founder of Save the Paris Cafe/www.savethepariscafe.com, a website which celebrates the Paris café and the preservation of them, which in recent years has been threatened by rising rents and cultural changes. 

We met at a most charming café in the 5^th arrondissement across from the Poly Technique University, Les Pipos. 

One note about the Les Pipos is that isn’t in the video, is when Woody Allen shot scenes from Midnight in Paris nearby on a hill close to the Pantheon, Les Pipos was his cantine and hangout when shooting the film.
