I would definitely make the pork chops! I just got back from 2 weeks in France (finally!) which included several days in Dijon. Of course I had to bring some back with me and I'm having a great time with it. I love Wini Moranville's other book and have enjoyed the recipes and writing very much.


Salmon with White wine would be the first, followed by the Pork Chops with Mustard Sauce.
