I invited my cooking class partner Charlotte Puckette to write a guest post today and share her comfort food recipes.
As the quarantine becomes more widespread and restaurants, bars and cafés close, many of us are eating more of our meals at home. But preparing food can be more than just a way to fed ourselves and others. Cooking during the confinement can be therapy for the cook and a delicious homemade meal can be a source of comfort for those around the table.
Normally this time of year I would be busy in the kitchen getting ready for the onslaught of springtime catering and cooking classes. But like the rest of the world, I am at home and my cooking is focused on simple, tasty dishes to feed my family and keep spirits up. Some days it’s a quick and easy recipe like Pasta with Asparagus, Cream and Lemon or Savoury Clafoutis with Cherry Tomatoes and Soft Sheeps Cheese. When we need a flavor hit Indian-Spiced Salmon or Pork Meatballs with Thai Massaman Curry Sauce brighten things up. Dessert is always welcome and a Chocolate Hazelnut Cake (featuring Nutella!) or a simple Whole Orange Cake keeps everybody happy.
