One of my favorite summer desserts when I was a kid was the ice cream sandwich that I bought from the Good Humor truck for 25 cents. After ringing the bell the on his truck, I would run to get my scrumptious vanilla ice cream in between two layers of chocolate wafers from the Good Humor man and gobbled it up within minutes.
I recently discovered Pierre Hermé has done a sophisticated, grown-up version of my fond childhood treat. Called Miss Gla'Gla (is this Lady Gaga's frozen cousin?), it has exotic flavored ice cream with layers of macaron or sable´(crisp butter cookie). I went to the rue Cambon shop and ordered the Infinement caramel with salted butter caramel ice cream. Presented in a shiny silver box with Miss Gla'Gla embossed in bold letters, it had the cache´of a movie star's private jewel box. It was a hot summer day and the frozen caramel hit the spot, although it was slightly disappointing as the caramel and salt flavor was not as intense as it is in their macaron of the same flavor. The layers of sablé were crispy and flaky.
Of course Miss Gla'Gla has many wild and outrageous flavors just like Lady Gaga's outfits, including pistachio and strawberry, chocolate and nougatine, rose, litchi and raspberry, orange and passion fruit, pistachio and Morello cherry, and passion fruit, rhubarb, and strawberry. But she comes with a much heftier price tag than my Good Humor one, 6.20 euros.

Those are beautiful. I'm reading "La Seduction: How the French Play the Game of Life" by Elaine Sciolino. Great book about what makes France France....and it's just this sort of thing. (Though I'm sorry the caramel-salt one didn't blow you away.)
And speaking of childhood treats "Frenchified," have you ever had creme de cassis sorbet paired with vanilla ice cream? It's much like a Dreamsicle...only more....French.....

Coming down a notch in cost and cache, but going up to the top for caramel sale ice cream try a box from Picard. Whilst you're doing that, also try their dark chocolat sorbet.
Both to die for!
