On my quest to eat healthier in Paris, which is damned hard to do with so many temptations, I now eat a special bread for my morning toast. Instead of heavenly croissant or baguette or brioche I have a dense dark rye bread, kind of like going from sky high Christian Louboutin heels to sensible flats.
Every few weeks I go on a bread pilgrimage to the bio (organic) market on Boulevard Raspail. Although the market is open on Tuesdays and Fridays, it’s only bio on Sundays. Lots of well heeled bourgeois from the rich 6th arr. frequent the market and pay through the nose for the privilege of buying precious organic products.
There’s a wonderful bread stall, Patibio, where I get my bread. I usually just go get my bread as quickly as I can without paying much attention to the rest of the market to avoid spending a small fortune. The bread is the most reasonable things at the market and my loaf costs only 3.50€ which can last almost two weeks, eating one slice a day.
The last time I was there I decided to linger a bit and check out the other breads. I got into a conversation with the manager, a congenial manwith a large diamond earring in his left ear.He told me Patibio was one of the first organic bakers in Paris, going into business in 1990. Robert Scharr, one of the founding partners, was vegetarian and also a pastry chef. His goal was to use organic ingredients for traditional French bread and pastry making. People thought he was crazy because at the time organic was not part of the culture yet.
Fast forward to 2016 and Patibio is one of the largest organic bakers in France. They sell their products throughout France and in Paris they are sold at health food stores including Naturalia and La Vie Claire.
The nice man with the earring gave me a taste of the bead with dried figs, raisins, almonds and hazelnuts, which was divine.
There are over 30 varieties to choose from including rye, buckwheat, five grain, Kamut, cranberry, apricot and pumpkin seed and olives and herbs. All breads are made with filtered water. Patibio also makes croissants, pain au chocolat, quiches, savory and sweet tarts, brownies and other desserts. So now you know why I get in and out so quickly, too dangerous.

I am happy to announce the launch of Eye Prefer Paris Cooking Classes. Come take an ethnic culinary journey with me and chef and caterer Charlotte Puckette, co-author of the bestseller The Ethnic Paris Cookbook (with Olivia Kiang-Snaije). First we will shop at a Paris green-market for the freshest ingredients and then return to Charlotte's professional kitchen near the Eiffel Tower to cook a three-course lunch. After, we will indulge in the delicious feast we prepared along with hand-selected wines.
